I never thought I would be inspired to try a vegan burger. You might be pleasantly surprised. The flavor is out of this world!

SERVINGS

Approximately 4 servings 

INGREDIENTS

  • 2 cups of chopped Portobello or Oyster mushrooms 
  • 1/2 cup parmesan cheese
  • 1 Tbsp. Kay's Cajun Plus
  • 2 green onions, minced (fresh is best)
  • 3 garlic cloves, minced (fresh is best)
  • 1 Tbsp. date syrup
  • 1/2 small onion, chopped
  • 1/2 cup Fonio, cooked (or bread crumbs)
  • 2 Tbsp. grapeseed oil (or your choice)
  • 1/4 cup chickpea flour (or your choice)

DIRECTIONS

STEP 1

Put mushrooms, onions, and garlic in a food processor or finely chop. Be careful to only lightly rinse your mushrooms (they hold water). 

STEP 2

Combine all ingredients in a bowl and make 4 patties. If your patties are wet, put in oven on parchment paper on 400°F for 30 minutes. If not, pan fry on medium high until brown on each side. We prefer ours in the oven!

STEP 3

Skip the bun and top with Aioli or Everything sauce (see recipe). Enjoy!
